Cooking a steak is a simple process, but it's important to choose the right cut of meat and pay attention to the cooking time to ensure the perfect doneness. Here's a basic recipe for cooking a steak on the stovetop:
Ingredients:
1-2 steaks (any cut, such as ribeye, sirloin, or filet mignon)
Salt and pepper
Oil (such as olive oil, avocado oil, or canola oil)
Instructions:
Take the steak out of the refrigerator and let it sit at room temperature for 30 minutes to an hour before cooking.
Pat the steaks dry with a paper towel, and season them generously with salt and pepper on both sides.
Heat a heavy skillet or cast-iron pan over high heat until it's very hot. Add a small amount of oil to the pan and swirl to coat.
Carefully place the steaks in the pan and cook them for 2-3 minutes on each side for rare, 3-4 minutes for medium-rare, 4-5 minutes for medium, and 5-6 minutes for well-done. Use tongs to flip the steaks, and do not press down on them with a spatula as this will release their juices.
Once the steaks are cooked to your desired doneness, remove them from the pan and let them rest for 5-10 minutes before serving.
Keep in mind that the thickness of the steak and the level of heat in the pan will affect the cooking time. The best way to know when the steak is ready is to use a meat thermometer. A rare steak should be around 120-125°F (49-52°C), medium-rare 130-135°F (54-57°C), medium 140-145°F (60-63°C) and well done 150-155°F (66-69°C)
You can also grill the steak or cook it in the oven. Grilling will give the steak a nice char and the oven method allows you to cook it evenly.
